The gentian schnapps is distilled in the distillery. It is made from 2 varieties, the yellow and red gentian. Only the roots are used, cut into small pieces and mixed in with yeast, the mash takes 30 days. Then there are 30 herbs.
The fermentation process is complete and the mash is placed in the copper still.
