The city is traversed in the central city area from east to west by the eponymous Pegnitz. In the western area flows the Bitterbach, which has cut the Bitterbach gorge in the Burgsandstein in a narrow piece of forest in the northwest of the city. The picturesque nick was opened to the public in the early 1950s. The marked trail along the creek is part of the Geoecological Nature Trail Bitterbachschlucht.

The steep gradient (“Lauf”) of the Pegnitz and the convenient location have made a decisive contribution to Lauf being able to develop into the most important and largest city in the district of Nürnberger Land over a period of more than nine centuries.

As early as the second half of the 11th century, a village settlement was probably established on the northern bank of the Pegnitz, which was joined a century later by the spacious market area with the town hall in the middle. Around 1275, four mills on the river were mentioned for the first time, which, like the settlement, were under the protection of the castle on the Pegnitzinsel. A family of servants of the emperor had their seat there, which was entrusted with the administration of the imperial estate.
