This underground olive mill, one among among the thirty-five documented from the 1600s, it's enterely and fine renovated and opened for the public visiting. In this evocative place it's possible to admire ancient equipment used for the production of the so-called 'lampante' oil that this town exported throughout Europe. Infact, already at the beginning of the sixteenth century, Gallipoli was the largest European square in terms of oils. In particular, fatty oil was produced and used to illuminate the great centers as Paris, London, Berlin, Vienna, Stockholm, Oslo, Amsterdam etc. The Salento oil was used till the end of the nineteenth century, when the arrival of the electricity signed the crisis of its export.
