Graduation towers were originally industrial buildings that served to increase the salt concentration of the brine. Because the higher the concentration, the more likely it is that salt crystals will form during boiling, and the sooner these salt crystals will form, the less fuel is required. There used to be three graduation towers in the village, so you could graduate even more efficiently - i.e. increase the salt content.
