A village of superior interest, Joncels dominates the Gravezon valley, and is crossed by narrow streets with picturesque houses. A stopover for pilgrims who went to Compostela coming from Lodève, Joncels preserves the remains of a Benedictine Abbey whose origins date back to the 8th century and which was, in the Middle Ages, one of the most important in Languedoc.

The Rédounel windmill is one of the first mills on the Larzac causses. It accompanied the agricultural activities of the Templars established in La Couvertoirade from the 12th century. It has been restored and is still in remarkable condition today.

The charm of a small Occitan village leaning against the foothills of the Causse du Larzac, distinguished by the density of its buildings and its simple architecture. Deserted about twenty years ago, it owes its rebirth to foreign immigration (mainly English). The houses, built of local sandstone, rise on the right bank of the river. Some have retained evidence of Renaissance architecture (mullioned windows and transoms, ornate lintels, etc.). Saint-Privat experienced significant economic development at the end of the 19th century, with the exploitation of its subsoil. Rich in sandstone, it allowed the manufacture of many grinding wheels for sharpening tools or polishing marble, which were transported to Lodève, then the ports of Sète or Montpellier to be exported to Mediterranean countries.

The Abbey of Saint-Pierre-aux-Liens in Joncels, better known by its simplified name of Joncels Abbey, is a superb Romanesque building. Of what was once one of the most important Christian religious centers in Languedoc, only the church, the chapter house, and part of the cloister remain. The simplicity and beauty of the carvings in this beautiful stone give you a glimpse of its former magnificence.
