The square has existed since 1291 but under the name of the nearby church of San Giorgio. From the 13th century onwards, the square began to form a structure with buildings and so Cassero del Sale was built here. This salt deposit was of great economic importance for Grosseto.

The square is bordered on the south and west sides by the Porta Vecchia, the Del Fa building and the curtain wall that reaches the Cavallerizza Bastion, where a pedestrian passage allows the exit of the historic center. The east side is bordered by the first buildings of the Strada Ricasoli, which connects Piazza del Sale with Piazza Dante. The north side is closed by the ancient Cassero del Sale, whose façade is located between the inner side of the bastion and the beginning of the western stretch of the historic Strada del Giuoco del Cacio, which corresponds to today's Via Mazzini.
