ESE huts = bait huts, this is where the ESE girls lived.

The ESE girls went ashore at low tide to dig for lugworms, which they then put on the fishermen's hooks. That was called "ese".

A hard-working ESE girl managed to equip several hundred hooks on lines with worms and put them in boxes for the fishermen in one day. Each community of 6-8 fishermen employed an ESE girl.

It was fished with fishing line and lugworms from Easter to Saint Hans.

It was a cold place to work and the girls wore woolen trousers, dresses and jackets made of thick wool and a large scarf on their heads. One went barefoot in the cold, damp sand. To prevent the dress from getting wet while digging up and collecting the lugworms, it was tied high around the body.

Their only tools were a bucket and a fork with 3 long, wide prongs that could dig quickly and deeply.

The ESE girls worked on Fano, on the Ho Bugt, in Blavand and Nymindegab from around 1820-1880.

The delicious delicacy Bakskuld (Hjerting Dabs) originally comes from the little dabs that the fishermen threw back into the boxes as a reward for the ESE girls.
