A distinction is made between white (or pale) and green asparagus. In the former, the shoot axes are harvested before they reach the surface of the earth. The asparagus shoots are harvested in Europe from March to June, depending on the region, and are particularly valued as a vegetable. In Germany today, the consumption of white asparagus predominates, in English-speaking countries (as in the past also in Germany) that of green asparagus.
