One of the outstanding tourist elements of Utiel is the visit to several of the underground cellars, of the nearly two hundred, that make up the Historic Center. First, the extraction of the raw material was carried out, marly clay that makes up our edaphological substrate and was used for the construction of the buildings themselves using the rammed earth technique. This is where the massive wine production of Utiel begins with our native Bobal variety, using the hollows as a cellar, a true underground labyrinth.
