Katrepel is the shape of the old coastline that the dike still follows.
What you are describing are excavation pits from dike construction work on the Katrepel or Katzenbuckel, which have almost doubled in size since 1981.
The water remains under the layer of earth because of the clay sole, the mudflats, so to speak.
