Risi e bisi is a classic of Venetian cuisine. Creamy risotto with peas, refined with Gorgonzola, Parmigiano and butter, with Rothwinder asparagus from the eternal ice and pear slices caramelized in ghee on endives with quince jelly. A dream. 🥰🥰
