    The coat of arms for the Dutch province of Zeeland shows a lion rising out of the sea with the motto, Luctor et Emergo. “I struggle and emerge”.It is fitting for a place that has been reclaimed from the ocean. Much of the province lies below sea level and would be a muddy delta flooded by tides if it weren’t for the dykes and dams that its residents have created. The islands and peninsulas that they have built over the centuries—Schouwen-Duiveland, Tholen, Noord-Beveland, Walcheren and Zuid-Beveland—were once small patches of dry land, which have steadily grown, thanks to the ingenuity of Dutch engineers.On Neeltje Jans, the island that was made for the construction of the nine-kilometre-long Oosterscheldekering sea barrier, a plaque reads: “Here, the tide is ruled by the moon, the wind, and us.”The Dutch may have conquered the tides, but their struggle goes on—against the wind.It blows in off the sea and batters the countryside. Farmers grow hawthorn hedges to shield their houses and crops from it. On a bike, you can sometimes hide behind those hedges to find some respite. Still, riding in Zeeland is always a bout with the wind. Riding into it can be as hard as climbing a mountain. It might take all of your strength to go 15 kilometres an hour, and then, you’ll turn and find yourself spinning out your 11 with almost no effort. Most days, the wind blows from the south-west, though it can always switch. Most days, there is nothing to do but accept it, duck low, and pedal hard.Don’t duck too low though. The views in Zeeland are, in their own way, as magnificent as any alpine vista. The dams, sluices, locks, dykes, bridges, and levees of the Delta Works are among the wonders of the modern world. By the seaside, you’ll see white sand beaches, kites floating in the air, sailboats skittering across the waves.Stop in a pretty old town along the way for a Bolus, a Zeeuwse pastry rolled in brown sugar, lemon zest, and cinnamon. Mussels and fried fish you’ll want to save for afterwards.Climbing Dutch mountains all day will be a struggle, but you will emerge satisfied.
