Lake Jastorf was created in 1976 through soil extraction as a compensatory measure for the construction of the Elbe Lateral Canal. Since 1977, the "Jastorf Lake Bird Sanctuary" has been designated a nature reserve. From the very beginning, parts of the lake were planned and developed as nature conservation areas.

Approximately half of Lake Jastorf, including its surrounding areas, has been declared a nature reserve. The 16.5-hectare area is the most important waterbird sanctuary in the Uelzen region. Deepwater and shallow water zones were created to protect birds.

Just a few years after Lake Jastorf was created, 140 bird species were recorded there, including 49 breeding bird species. Cormorants and greylag goose have been breeding on the western shore for several years, and the greylag goose has also repopulated. Other regular breeding and migratory birds include various duck species, great crested grebes, marsh harriers, ospreys, the great bittern, and kingfishers. The nature reserve is also an important amphibian habitat.

From the observation tower, well hidden in the riparian woodland on the north bank, you can observe the waterfowl without disturbing them. From here, you can easily see most of the Jastorfer See bird sanctuary. To help even non-bird experts know what or who they are observing, there is a sign listing the regularly occurring bird species.
