      Heather honey is a very special honey specialty. This is partly due to its almost jelly-like consistency, the red-brownish color and its intense taste. The bees collect the nectar of the common heather during the heather bloom in late summer. The bees fill the honeycomb of their beehive with the nectar. For the Heath beekeepers, the laborious work of honey harvesting then begins. Heather honey is not easy to harvest due to its jelly-like consistency, which is due to certain proteins in honey. The beekeepers: inside cannot hurl the honey out of the honeycombs as easily as normal honey, because it is too tough. Therefore, heather honey is often offered in honeycomb pieces.
