The 18th-century oil mill (Moulin à Huile) in Entrevaux is the only functioning oil mill in the Alpes-de-Haute-Provence department.

The mill was first documented in 1750. Since then, it has changed hands several times. In 1983, it became municipal property again.

The producers of the Entrevaux Olive Association and the generations of millers who have passed on their know-how ensure the management and production of olive oil.

The producers tend the olive trees, which they sometimes inherited from their parents, and continue the tradition by bringing their olives to the mill. The oil, intended for their personal consumption, appears as a reward for the regular work done on the olive trees!

The miller, sometimes assisted by the producer, produces the oil. The olives are crushed under the stone mill to form a dough that is placed in scourtins, which are pressed to obtain the oil.
