Around 1120, a water castle was built in Adelsdorf. It stood next to the old parish church on the Aischwiesen, was destroyed in 1430 in the Hussite War and repeatedly damaged in the Peasants' War in 1525 and in the subsequent war turmoil. By 1666 at the latest, it was leveled. In 1592, the Stiebars built the original horseshoe-shaped castle that still exists today. In 1826, the middle section was provided with a stepped gable. In 1836 the dilapidated right wing of the castle was demolished. The twelve curved St. Andrew's crosses in the half-timbered gable should not only be decorative but also deter evil spirits.

In the past, a white woman was said to have dealt with the rooms of the castle: in 1736, a peddler from Fürth had been charged with a minor theft and had been killed in the castle by lashes.

In 1993, the castle was acquired by the community Adelsdorf. Several times a year exhibitions are held there.

Adelsdorf Castle is located in the heart of the community. It is a baroque country or hunting lodge. The two-storey, solid north wing with a gabled roof is complemented by a two-storey half-timbered east wing as well as outbuildings and the castle chapel - designated "1595" and 1600. The castle's predecessor was a moated castle.
