The origin of Cobisa dates from the year 1175 when Mozarabic documents appear that attest to the existence of a town near Toledo. Although prior to this documentation, these places were populated by Celtiberian towns that stretched between Madrid and Toledo.

From the ruins of that town, Cobisa was born. Its most outstanding building is the Church of San Felipe and Santiago Apostol, built on an old hermitage from the 12th century.

Despite its proximity to Toledo and location along the freeway ring the little town has maintained much of its character, particularly in the downtown around Plaza de la Concordia.
