The cuisine of Parco Nazionale della Sila is the essence of mountain Calabria, drawing from the abundance of nature. The central place here is occupied by Sila potatoes (Patate della Sila), famous for their excellent quality and diverse use in dishes (e.g. patate 'mpacchiuse - fried potatoes with onions, or as an addition to frittata). In autumn, the noble porcini mushrooms take the lead, dominating many seasonal dishes (e.g. risotto ai funghi porcini, pasta con i funghi). The whole is complemented by chestnuts, used in both savory (e.g. zuppe di castagne - chestnut soups) and sweet dishes (e.g. castagne 'mbiancate - cooked chestnuts), as well as local cold cuts and cheeses, reflecting pastoral traditions (e.g. pecorino silano, soppressata), creating an authentic and filling palette of flavors of the region.
