    Das von Dr. Samuel Sarphati, einem führenden Arzt des 19. Jahrhunderts, gegründete Hotel wurde als architektonisches Denkmal errichtet. Ein Palast am Ufer der Amstel, der Amsterdam international bekannt machen sollte. Das Hotel entstand in Zusammenarbeit mit Cornelis Outshoorn, einem der fortschrittlichsten Amsterdamer Architekten des 19. Jahrhunderts, und wurde von einigen der berühmtesten Gebäude Europas inspiriert. Mit seinen kunstvoll gestalteten Bögen aus dem „Goldenen Zeitalter“ und der prunkvoll ausgestatteten Lobby zog das Hotel seit seiner Eröffnung am 27. April 1867 zahlreiche prominente Persönlichkeiten und Gäste an, die den Glanz des Amstel Hotels erleben wollten.
